Our first Christmas Eve together:) We started the big cooking on Sunday before Holidays by making a pâté of duck. Of course, despite the few hours spent in supermarket we forgot to buy vegetables to cook the duck… and once again we had to visit the local Tesco. Pâté is a few hour work but the choice was so perfect that we decided to make it once again for the New Year, this time of goose. In the same book that was attached to some cooking magazine there was also a perfect recipe for minced carp in jelly with a lot of raisins and decorated with carrot. I served the dish on a plate from Talin, that was painted with parsley pattern. We had some stress that the jelly would not set but we added some gelatin and it worked immediately however Jacek insisted that it should be done naturally. Than I made a cheese cake – very simple, always perfect, made according to a receipt that is printed on each cup of Balkan yoghurt. The whole philosophy relies on not forgetting to buy biscuits (of course I did forget to buy them and on the last day I had to buy them in the local shop on the lunch break) and cream pudding (everywhere reigns vanilla). Herrings for me should be cooked in honey with raisins and onion. For Jacek we need to do “szuba” salad – made of herring covered with mustard, beetroots cooked mixed with mayonnaise, green sweet pees and pickled mushrooms. It must rest a little bit before serving but not too long as it starts to be too much wet. I will even not mentioned a fried carp as it is obvious – for me it must be served with red cabbage. I have to confess that this year it was not that delicious. And… I had to add a few words about makagigi – cakes made of poppy, honey and walnuts. On the first day they were too bitter but thanks God, later on it was eatable. And the last one made of meat for the first day of Christmas – joint of pork baked in the traditional manner with marjoram and a little bit of garlic. Our families supplied us with dumplings with cabbage and mashrooms, carp in jelly, borsch with little dumplings (called in Poland “ears”) and makowiec and delicious poppy - seed cake Did we have 12 dishes (traditional number in Poland for Christmas supper)? Even if not, it was a real orgy of flavors and I am about 3 kilo heavier:)
omg, i love pierogi! :) i know all this food since we always celebrate christmas the polish way. my boyfriend is from poland. love love love the food!
